Description

A delightful and healthy meal featuring tender zucchinis filled with a savory ground turkey mixture and topped with melted mozzarella cheese.


Ingredients

  • 4 medium zucchinis
  • 1 pound ground turkey
  • 1 cup diced tomatoes
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the zucchinis by cutting each in half lengthwise and scooping out the center to create boats.
  3. Sauté the diced onion and garlic in a skillet with olive oil over medium heat for 2-3 minutes.
  4. Cook the ground turkey in the skillet until browned, about 5 to 7 minutes.
  5. Mix in the diced tomatoes and Italian seasoning, cooking for an additional 5 minutes.
  6. Fill each zucchini half with the turkey mixture.
  7. Sprinkle shredded mozzarella cheese on top of each stuffed zucchini.
  8. Bake the zucchini boats on a baking sheet for 20-25 minutes until tender and the cheese is golden.
  9. Serve warm and enjoy!
