Description

A vibrant and comforting one-pan dish featuring marinated chicken, sweet pineapple, and colorful bell peppers, perfect for busy weeknights.


Ingredients

  • 4 chicken thighs
  • 1 cup pineapple chunks
  • 1 bell pepper (any color)
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the marinade by whisking together soy sauce, olive oil, honey, minced garlic, salt, and pepper in a medium bowl.
  3. Marinate the chicken thighs in the marinade for at least 30 minutes or overnight.
  4. Arrange the marinated chicken on a sheet pan with pineapple chunks and bell peppers.
  5. Roast in the preheated oven for 25-30 minutes until the chicken reaches 165°F (75°C) and vegetables are tender.
