Description

A comforting and nutritious casserole made with tender chicken, creamy sauce, and vibrant vegetables, perfect for family dinners or potlucks.


Ingredients

  • 2 cups cooked rice (brown rice or white rice)
  • 1 lb chicken breast, diced
  • 1 cup broccoli florets
  • 1 cup carrots, diced
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the ingredients: In a large bowl, combine 2 cups of cooked rice, 1 lb of diced chicken, 1 cup of broccoli florets, 1 cup of diced carrots, 1 can of cream of chicken soup, 1 cup of chicken broth, and a sprinkle of garlic and onion powders.
  3. Transfer this mixture into a greased 9×13 inch baking dish, spreading it evenly.
  4. Add cheese, if using, over the mixture for extra creaminess.
  5. Cover with aluminum foil and bake for 25-30 minutes.
  6. Uncover and finish baking for an additional 10-15 minutes until the cheese is bubbly and golden brown.
  7. Cool for a few minutes before serving.

Notes

Prepare the casserole a day in advance for convenience. Feel free to substitute vegetables as desired.
