- 4 chicken thighs
- 2 medium sweet potatoes, cubed
- 1 lb green beans, trimmed
- 1/3 cup honey
- 4 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the marinade by combining honey, minced garlic, soy sauce, olive oil, salt, and pepper in a mixing bowl.
- Toss the chicken thighs in the marinade and let them soak for about 10 minutes.
- Prepare the vegetables by placing sweet potatoes and green beans on a large baking sheet, drizzling with olive oil, and seasoning.
- Arrange the marinated chicken on top of the vegetables.
- Drizzle any remaining marinade over the chicken and veggies.
- Bake for 25-30 minutes until the chicken is cooked through and the sweet potatoes are fork-tender.
- Serve warm and enjoy!
Notes
For meal prep, marinate chicken and chop veggies a day in advance. This dish can also be made in an air fryer for quicker cooking.
