Description

A comforting one-pan dish of succulent chicken thighs glazed in honey garlic marinade, served with roasted sweet potatoes and green beans.


Ingredients

  • 4 chicken thighs
  • 2 medium sweet potatoes, cubed
  • 1 lb green beans, trimmed
  • 1/3 cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the marinade by combining honey, minced garlic, soy sauce, olive oil, salt, and pepper in a mixing bowl.
  3. Toss the chicken thighs in the marinade and let them soak for about 10 minutes.
  4. Prepare the vegetables by placing sweet potatoes and green beans on a large baking sheet, drizzling with olive oil, and seasoning.
  5. Arrange the marinated chicken on top of the vegetables.
  6. Drizzle any remaining marinade over the chicken and veggies.
  7. Bake for 25-30 minutes until the chicken is cooked through and the sweet potatoes are fork-tender.
  8. Serve warm and enjoy!

Notes

For meal prep, marinate chicken and chop veggies a day in advance. This dish can also be made in an air fryer for quicker cooking.
