Description

A vibrant and creamy dip filled with sweet corn, zesty lime, and a kick of jalapeño, perfect for sharing with friends and family.

Ingredients

Scale
  • 2 cups corn (fresh, frozen, or canned)
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup cotija cheese (or feta)
  • 1/2 cup chopped cilantro
  • 1 jalapeño (finely chopped, optional)
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Combine the corn, mayonnaise, sour cream, cotija cheese, chopped cilantro, and jalapeño, if using, in a large mixing bowl. Squeeze in the lime juice and season generously with salt and pepper.
  2. Mix with a spatula or wooden spoon until all ingredients come together, forming a creamy, consistent blend.
  3. Transfer the mixture to a serving dish and refrigerate for at least 10 minutes.
  4. Serve with tortilla chips or fresh veggies. Dive in and enjoy!

Notes

For enhanced flavor, let the dip chill for longer. Consider baking it for a warm version.
