- 2 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup green onions, chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup bread crumbs
- 1 egg, beaten
- Oil for frying
Instructions
- Combine the cooled mashed potatoes, cheddar cheese, Parmesan, green onions, garlic powder, salt, and black pepper in a large bowl.
- Shape the mixture into small puffs or balls about the size of a golf ball.
- Dip each puff into the beaten egg, allowing excess to drip off, then roll in bread crumbs until fully coated.
- Heat oil in a frying pan over medium heat until shimmering.
- Fry the puffs in batches for 3-4 minutes on each side until golden brown.
- Drain on paper towels and serve warm.

Make-ahead tips: Prepare the mixture ahead of time and refrigerate or freeze un-fried puffs for later frying.
