Description

Deliciously crispy puffs filled with creamy mashed potatoes and a blend of cheddar and Parmesan cheeses.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup bread crumbs
  • 1 egg, beaten
  • Oil for frying

Instructions

  1. Combine the cooled mashed potatoes, cheddar cheese, Parmesan, green onions, garlic powder, salt, and black pepper in a large bowl.
  2. Shape the mixture into small puffs or balls about the size of a golf ball.
  3. Dip each puff into the beaten egg, allowing excess to drip off, then roll in bread crumbs until fully coated.
  4. Heat oil in a frying pan over medium heat until shimmering.
  5. Fry the puffs in batches for 3-4 minutes on each side until golden brown.
  6. Drain on paper towels and serve warm.

Notes

Make-ahead tips: Prepare the mixture ahead of time and refrigerate or freeze un-fried puffs for later frying.
