- 1 lb chicken breast, diced
- 1 cup orzo pasta
- 2 cups spinach
- 4 cloves garlic, minced
- 1 lemon, juice and zest
- 1 teaspoon Italian herbs
- 2 cups chicken broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- Olive oil
Instructions
- Heat a generous drizzle of olive oil in a large skillet over medium heat. Once shimmering, add the diced chicken and sear until browned on all sides, about 5-7 minutes.
- Toss in the minced garlic and Italian herbs, stirring gently for another minute.
- Pour in the chicken broth and bring to a simmer.
- Stir in the orzo and let it simmer for about 8-10 minutes or until tender.
- Add the spinach, lemon juice, and zest, stirring until the spinach wilts.
- Lower the heat and gently stir in the heavy cream.
- Taste and adjust with salt and pepper.
- Serve warm, garnished with additional lemon zest if desired.
