Description

A comforting and vibrant dish of tender chicken, orzo pasta, and fresh spinach in a creamy lemon sauce.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup orzo pasta
  • 2 cups spinach
  • 4 cloves garlic, minced
  • 1 lemon, juice and zest
  • 1 teaspoon Italian herbs
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat a generous drizzle of olive oil in a large skillet over medium heat. Once shimmering, add the diced chicken and sear until browned on all sides, about 5-7 minutes.
  2. Toss in the minced garlic and Italian herbs, stirring gently for another minute.
  3. Pour in the chicken broth and bring to a simmer.
  4. Stir in the orzo and let it simmer for about 8-10 minutes or until tender.
  5. Add the spinach, lemon juice, and zest, stirring until the spinach wilts.
  6. Lower the heat and gently stir in the heavy cream.
  7. Taste and adjust with salt and pepper.
  8. Serve warm, garnished with additional lemon zest if desired.
