Description

Deliciously crispy on the outside and fluffy on the inside, these Mashed Potato Muffins transform leftovers into a comforting snack everyone will love.


Ingredients

  • 2 cups leftover mashed potatoes
  • 1/2 cup all-purpose flour
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 2 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon baking powder
  • Salt and pepper to taste
  • Chopped green onions or chives (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and generously grease a muffin tin.
  2. Combine the leftover mashed potatoes, flour, shredded cheese, eggs, milk, baking powder, salt, and pepper in a large mixing bowl.
  3. Fold in chopped green onions or chives if desired.
  4. Spoon the mixture into the greased muffin tin, filling each cup about three-quarters full.
  5. Bake for 20-25 minutes or until the tops are golden brown and crunchy.
  6. Cool for a few minutes before removing from the tin. Serve warm.
