- 2 cups leftover mashed potatoes
- 1/2 cup all-purpose flour
- 1/2 cup shredded cheese (cheddar or your choice)
- 2 large eggs
- 1/4 cup milk
- 1/2 teaspoon baking powder

- Chopped green onions or chives (optional)
Instructions
- Preheat your oven to 375°F (190°C) and generously grease a muffin tin.
- Combine the leftover mashed potatoes, flour, shredded cheese, eggs, milk, baking powder, salt, and pepper in a large mixing bowl.
- Fold in chopped green onions or chives if desired.
- Spoon the mixture into the greased muffin tin, filling each cup about three-quarters full.
- Bake for 20-25 minutes or until the tops are golden brown and crunchy.
- Cool for a few minutes before removing from the tin. Serve warm.
