Description

A delicious and healthy dish featuring zucchini filled with a flavorful mixture of ground meat, rice, black beans, and cheese, baked to perfection.


Ingredients

  • 4 medium zucchini
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn (frozen or fresh)
  • 1 cup salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup shredded cheese (like Monterey Jack or Cheddar)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchini in half lengthwise and scoop out the insides gently.
  3. Brown the ground beef or turkey in a skillet over medium heat.
  4. Stir in the rice, black beans, corn, salsa, cumin, chili powder, salt, and pepper; mix thoroughly.
  5. Stuff the zucchini boats with the mixture, pressing down gently.
  6. Place the stuffed zucchini in a baking dish and top with shredded cheese.
  7. Bake for 25–30 minutes until the zucchini is tender and the cheese is bubbling.
  8. Garnish with fresh cilantro before serving.

Notes

Make-ahead: Prepare the filling a day in advance and stuff your zucchini when ready to bake.
