- 4 medium zucchini
- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1 cup black beans, rinsed and drained
- 1 cup corn (frozen or fresh)
- 1 cup salsa
- 1 tsp cumin
- 1 tsp chili powder
- 1 cup shredded cheese (like Monterey Jack or Cheddar)
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the zucchini in half lengthwise and scoop out the insides gently.
- Brown the ground beef or turkey in a skillet over medium heat.
- Stir in the rice, black beans, corn, salsa, cumin, chili powder, salt, and pepper; mix thoroughly.
- Stuff the zucchini boats with the mixture, pressing down gently.
- Place the stuffed zucchini in a baking dish and top with shredded cheese.
- Bake for 25–30 minutes until the zucchini is tender and the cheese is bubbling.
- Garnish with fresh cilantro before serving.
