Description

Delightful mini muffins infused with chai spices and topped with a luscious vanilla bean glaze, perfect for any occasion.


Ingredients

  • 1 ½ cups All-Purpose Flour
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • 1 tsp Chai Spice Mix (Cardamom, Cinnamon, Ginger)
  • ¼ tsp Salt
  • 2 large Eggs
  • ¾ cup Brown Sugar
  • ½ cup Milk
  • ¼ cup Melted Butter
  • 1 cup Powdered Sugar (for glaze)
  • 2 tbsp Vanilla Bean Paste (or Vanilla Extract)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin.
  2. Whisk together the dry ingredients in a mixing bowl.
  3. Beat the eggs and add the brown sugar, milk, and melted butter, mixing until smooth.
  4. Pour the wet mixture into the dry ingredients and gently fold until combined.
  5. Spoon the batter into the mini muffin liners, filling each about two-thirds full.
  6. Bake for 12-15 minutes, until a toothpick comes out clean.
  7. Cool in the pan for 5 minutes before transferring to a cooling rack.
  8. Mix powdered sugar and vanilla bean paste to create the glaze.
  9. Drizzle the glaze over the cooled muffins.

Notes

Consider using whole wheat flour for a different texture. You can substitute flaxseed meal for eggs for a vegan version.
