Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together the flour, sugar, baking powder, salt, and cinnamon in a large bowl.
- Combine the melted butter, buttermilk, and eggs in a separate bowl, whisking until smooth.
- Pour the wet mixture into the dry ingredients, stirring gently until just combined.
- Fold in the diced peaches.
- Mix together brown sugar, oats, 1/4 cup flour, and 1/2 teaspoon cinnamon for the crumble in a small bowl.
- Divide the muffin batter among the liners, topping with the crumble mixture.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
- Cool for a few minutes in the tin before transferring to a wire rack.
Notes
You can prepare the batter a day in advance and refrigerate it overnight. For a vegan option, use flax eggs.
