Description

Delicious muffins infused with the flavors of fresh peaches and warm cinnamon, topped with a crunchy crumble.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 2 cups fresh peaches, diced
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/4 cup flour (for crumble)
  • 1/2 teaspoon cinnamon (for crumble)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, salt, and cinnamon in a large bowl.
  3. Combine the melted butter, buttermilk, and eggs in a separate bowl, whisking until smooth.
  4. Pour the wet mixture into the dry ingredients, stirring gently until just combined.
  5. Fold in the diced peaches.
  6. Mix together brown sugar, oats, 1/4 cup flour, and 1/2 teaspoon cinnamon for the crumble in a small bowl.
  7. Divide the muffin batter among the liners, topping with the crumble mixture.
  8. Bake for 20-25 minutes, or until a toothpick comes out clean.
  9. Cool for a few minutes in the tin before transferring to a wire rack.

Notes

You can prepare the batter a day in advance and refrigerate it overnight. For a vegan option, use flax eggs.
