Description

Delightful skewers of pork, pineapple, and vegetables, perfect for summer grilling and gatherings.


Ingredients

  • 1 pound pork tenderloin
  • 1 fresh pineapple
  • 1 red onion
  • 1 green bell pepper
  • 1/2 cup BBQ sauce
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your grill to medium heat.
  2. In a large bowl, combine pork, pineapple, red onion, and green bell pepper.
  3. In a small bowl, whisk together BBQ sauce, olive oil, soy sauce, garlic powder, and black pepper until well blended.
  4. Pour the BBQ sauce mixture over the pork and vegetables, tossing gently to coat evenly.
  5. Thread the pork and veggies onto your skewers, alternating ingredients.
  6. Grill the skewers for 15-20 minutes, turning occasionally until the pork reaches 145°F (63°C).
  7. Brush with remaining BBQ sauce during the last few minutes of grilling.
  8. Serve hot.

Notes

Marinate the pork and veggies for a few hours for deeper flavor. Wooden skewers should be soaked to prevent burning.
