- 1 lb Chicken (boneless, skinless, cut into cubes)
- 1 cup Rice (jasmine or long-grain)
- 1 cup Pineapple (fresh or canned, chopped)
- 1/4 cup Soy sauce
- 2 tbsp Honey or brown sugar
- 3 cloves Garlic (minced)
- 1 tbsp Ginger (minced or grated)
- 1 Bell pepper (diced)
- 1 Onion (chopped)
- 2 tbsp Vegetable oil
- Salt and pepper to taste
- Green onions (for garnish)
Instructions
- Heat a splash of vegetable oil over medium heat in a large pan.
- Add chopped onions and minced garlic, sautéing until translucent.
- Toss in the chicken cubes, seasoning with salt and pepper; cook until golden brown.
- Stir in minced ginger, diced bell peppers, and pineapple chunks.
- Add the rice, soy sauce, honey, and enough water to cover the rice; stir to combine.
- Bring to a boil, reduce heat to low, cover, and cook for 15-20 minutes until rice is tender.
- Fluff the rice with a fork and garnish with green onions before serving.
Notes
For a vegetarian option, substitute chicken with tofu. You can also bake the dish at 375°F (190°C) for about 30 minutes.
