Description

A vibrant dish combining savory chicken, sweet pineapple, and fluffy rice, perfect for any occasion.


Ingredients

  • 1 lb Chicken (boneless, skinless, cut into cubes)
  • 1 cup Rice (jasmine or long-grain)
  • 1 cup Pineapple (fresh or canned, chopped)
  • 1/4 cup Soy sauce
  • 2 tbsp Honey or brown sugar
  • 3 cloves Garlic (minced)
  • 1 tbsp Ginger (minced or grated)
  • 1 Bell pepper (diced)
  • 1 Onion (chopped)
  • 2 tbsp Vegetable oil
  • Salt and pepper to taste
  • Green onions (for garnish)

Instructions

  1. Heat a splash of vegetable oil over medium heat in a large pan.
  2. Add chopped onions and minced garlic, sautéing until translucent.
  3. Toss in the chicken cubes, seasoning with salt and pepper; cook until golden brown.
  4. Stir in minced ginger, diced bell peppers, and pineapple chunks.
  5. Add the rice, soy sauce, honey, and enough water to cover the rice; stir to combine.
  6. Bring to a boil, reduce heat to low, cover, and cook for 15-20 minutes until rice is tender.
  7. Fluff the rice with a fork and garnish with green onions before serving.

Notes

For a vegetarian option, substitute chicken with tofu. You can also bake the dish at 375°F (190°C) for about 30 minutes.
