Description

Delicious pineapple crumble bars with a crunchy top and a soft, tropical filling, perfect for summer.


Ingredients

  • 1 cup all-purpose flour

  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted

  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup cornstarch

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and prepare a 9×9-inch baking dish by lightly greasing it.
  2. Prepare the base: In a large mixing bowl, combine the flour, oats, brown sugar, granulated sugar, baking soda, and salt. Whisk until blended, creating a dry mixture.
  3. Add the wet ingredients: Stir in the melted butter and vanilla extract until the mixture becomes crumbly yet cohesive, resembling wet sand.
  4. Press the crust: Take half of the crumb mixture and firmly press it into the bottom of your prepared baking dish to form a solid crust.
  5. Mix the filling: In a separate bowl, combine the drained crushed pineapple with cornstarch. Mix until the pineapple is evenly coated, helping it set during baking.
  6. Layer the filling: Gently pour the pineapple mixture over the prepared crust, evenly spreading it out.
  7. Top with remaining crumble: Sprinkle the remaining oat mixture generously over the pineapple filling, creating an elegant topping.
