- 1 lb ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 large sweet potatoes
- 2 tablespoons butter
- 1/4 cup milk
- 1/2 cup bourbon
- 1/4 cup maple syrup
- 1 tablespoon Dijon mustard
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the ground pork, breadcrumbs, Parmesan cheese, egg, garlic, salt, pepper, and paprika in a mixing bowl. Mix gently.
- Form the mixture into golf ball-sized meatballs.
- Line a baking sheet with parchment paper and arrange the meatballs.
- Bake in the preheated oven for 20-25 minutes until golden brown and cooked through.
- Peel and chop the sweet potatoes, then boil them in salted water until fork-tender.
- Drain and mash the sweet potatoes with butter and milk until smooth.
- Combine the bourbon, maple syrup, and Dijon mustard in a saucepan over medium heat. Simmer until thickened.
- Serve by ladling sweet potato mash onto plates, topping with meatballs and drizzling with sauce.
Notes
You can make the meatballs a day ahead and refrigerate. Air frying is an alternative cooking method.
