Description

Savory pork meatballs served over creamy sweet potato mash, drizzled with a rich bourbon-maple sauce, perfect for cozy gatherings.


Ingredients

  • 1 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 large sweet potatoes
  • 2 tablespoons butter
  • 1/4 cup milk
  • 1/2 cup bourbon
  • 1/4 cup maple syrup
  • 1 tablespoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground pork, breadcrumbs, Parmesan cheese, egg, garlic, salt, pepper, and paprika in a mixing bowl. Mix gently.
  3. Form the mixture into golf ball-sized meatballs.
  4. Line a baking sheet with parchment paper and arrange the meatballs.
  5. Bake in the preheated oven for 20-25 minutes until golden brown and cooked through.
  6. Peel and chop the sweet potatoes, then boil them in salted water until fork-tender.
  7. Drain and mash the sweet potatoes with butter and milk until smooth.
  8. Combine the bourbon, maple syrup, and Dijon mustard in a saucepan over medium heat. Simmer until thickened.
  9. Serve by ladling sweet potato mash onto plates, topping with meatballs and drizzling with sauce.

Notes

You can make the meatballs a day ahead and refrigerate. Air frying is an alternative cooking method.
