Description

Savory pork meatballs served over creamy sweet potato mash, drizzled with a luscious bourbon-maple sauce.


Ingredients

  • 1 pound ground pork
  • 1 cup breadcrumbs
  • 1 medium onion, grated
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried sage
  • 1 large egg
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil
  • 2 large sweet potatoes, peeled and cubed
  • 1/4 cup butter
  • 1/4 cup heavy cream
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup bourbon
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1 cup chicken stock

Instructions

  1. Mix the meatball ingredients in a large bowl until just combined.
  2. Form the mixture into 16 golf-ball-sized meatballs.
  3. Brown the meatballs in a skillet with olive oil over medium-high heat for about 6 minutes.
  4. Prepare the sweet potatoes by boiling them until fork-tender, about 12-15 minutes.
  5. Make the bourbon-maple sauce by deglazing the skillet with bourbon and adding the remaining sauce ingredients.
  6. Finish cooking the meatballs in the sauce until they reach an internal temperature of 160°F.
  7. Mash the sweet potatoes with butter, cream, cinnamon, nutmeg, and salt until smooth.
  8. Serve the meatballs over the sweet potato mash, drizzled with bourbon-maple sauce.

Notes

For a healthier option, consider using ground turkey instead of pork. You can also make the meatballs and sauce ahead of time and refrigerate them.
