Description

A vibrant and quick dish featuring tilapia fillets in a rich roasted pepper sauce, perfect for dinner any night of the week.

Ingredients

Scale
  • 4 tilapia fillets
  • 1 cup roasted red peppers, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • Olive oil, for sautéing
  • Salt and pepper, to taste

Instructions

  1. Heat a drizzle of olive oil in a non-stick skillet over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in the chopped roasted red peppers and chicken broth, and bring to a gentle simmer for about 5 minutes.
  4. Gently nestle the tilapia fillets into the sauce and cook for 4-5 minutes per side, or until the fish flakes easily with a fork.
  5. Plate the tilapia and drizzle with the roasted pepper sauce. Serve over rice or with crusty bread.

Notes

Use jarred roasted peppers for a quicker option. You can customize with red pepper flakes for heat or fresh herbs for added flavor.
