Description

Indulgent Samoa Brownies featuring a rich chocolate base, gooey caramel, and toasted coconut for a delightful treat reminiscent of Girl Scout cookies.

Ingredients

Scale
  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups toasted coconut
  • 1 cup caramel sauce
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan generously with butter or cooking spray.
  2. In a large mixing bowl, melt the butter in the microwave or on the stovetop, then stir in the granulated sugar until fully combined and smooth.
  3. Beat in the eggs one at a time, ensuring they’re well mixed before adding the next one. Stir in the vanilla extract until incorporated.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually mix this dry blend into the wet ingredients until just combined—be careful not to overmix.
  5. Spread the brownie batter evenly in the prepared pan, smoothing the top for a beautiful finish. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs attached.
  6. Once baked, remove the brownies from the oven and allow them to cool slightly in the pan.
  7. Drizzle a generous layer of caramel sauce over the still-warm brownies, and then sprinkle toasted coconut evenly across the top.
  8. Melt the chocolate chips in the microwave in 30-second intervals, stirring well until smooth. Drizzle the melted chocolate over the coconut layer, creating tempting swirls.
  9. Allow the brownies to set at room temperature or in the fridge before cutting them into squares. Enjoy your Samoa-inspired treat!

Notes

For added texture, consider mixing in nuts or experimenting with different chocolates. Store in an airtight container for up to 3 days or in the fridge for a week.
