- 1 pound sausage (Italian or preferred type)
- 1 package (16 oz) gnocchi
- 2 cups fresh spinach
- 1 can (14 oz) diced tomatoes
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Sauté the chopped onion and minced garlic until soft and translucent.
- Brown the sausage, breaking it up until nicely browned.
- Add the diced tomatoes, stirring to combine and simmer.
- Incorporate the gnocchi and heavy cream, seasoning with salt and pepper, and simmer until gnocchi is tender, about 3-5 minutes.
- Finish by folding in the fresh spinach until wilted.
- Serve hot, garnished with Parmesan cheese if desired.
Notes
Feel free to customize with additional vegetables or different types of sausage. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
