Description

Deliciously tender muffins bursting with fresh blackberries and topped with a crunchy streusel for a delightful breakfast or snack.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup buttermilk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup fresh blackberries
  • 1/3 cup all-purpose flour (for streusel)
  • 1/4 cup brown sugar (for streusel)
  • 1/2 tsp cinnamon (for streusel)
  • 2 tbsp cold butter (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Stir together the melted butter, buttermilk, egg, and vanilla extract in a separate bowl.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the blackberries carefully with a spatula.
  6. Combine the ingredients for the streusel in a small bowl and cut in the cold butter until crumbly.
  7. Divide the batter evenly among the muffin liners and sprinkle the streusel topping over each muffin.
  8. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  9. Allow to cool in the tin for a few minutes before transferring to a wire rack.

Notes

Serve warm for the best flavor. Can be customized with other berries or add-ins like nuts or chocolate chips.
