Description

Deliciously soft and chewy oatmeal raisin bars, filled with oats and plump raisins for a comforting treat.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Combine dry ingredients: In a large mixing bowl, mix oats, flour, brown sugar, granulated sugar, cinnamon, baking soda, and salt.
  3. Prepare wet ingredients: In another bowl, beat the softened butter, egg, and vanilla extract until creamy.
  4. Mix dry ingredients into wet ingredients until just combined.
  5. Fold in raisins evenly into the batter.
  6. Spread the mixture into the prepared baking pan.
  7. Bake for 20-25 minutes until golden brown.
  8. Cool for 10 minutes in the pan before transferring to a wire rack to cool completely. Cut into bars.

Notes

Store in an airtight container at room temperature for up to 4 days or freeze for up to 3 months. Allow to cool before cutting for cleaner slices.
