Ingredients

- 1 cup peanut butter
- 1 cup brown sugar
- 1 egg
- 1/2 cup sourdough discard
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the peanut butter, brown sugar, egg, sourdough discard, vanilla extract, baking soda, and salt in a mixing bowl.
- Stir until truly blended.
- Use a cookie scoop or tablespoon to portion out the dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart.
- Bake for 10-12 minutes until the edges are golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
For a nut-free version, substitute with almond butter. For a vegan option, replace brown sugar with maple syrup.
