- 4 toasted sandwich buns (English muffins, bagels, or gluten-free buns)
- 1 tablespoon chipotle sauce
- Salt and pepper to taste
- Optional fillings: avocado, crispy bacon, or fresh spinach
Instructions
- Heat a non-stick skillet over medium heat and crack the eggs into it, swirling gently for even cooking.
- Season the eggs with salt and pepper to enhance the flavor.
- Place a slice of cheese on each egg in the last minute, covering with a lid to melt.
- Toast the buns until golden and crispy.
- Spread chipotle sauce on the bottom half of each bun.
- Layer the cheesy eggs on top and add any optional fillings you prefer.
- Top with the other half of the bun and serve hot.
Notes
Make-ahead tips: Prepare chipotle sauce in advance and store it in the refrigerator. Cook eggs in a silicone mold for air frying.
