Description

A vibrant salad that combines fresh spinach, juicy blueberries, and hearty wheat berries, topped with a tangy balsamic dressing.


Ingredients

  • 4 cups fresh spinach
  • 1 cup blueberries
  • 1 cup cooked wheat berries
  • 1/2 cup dried cranberries
  • 1/2 cup sliced almonds
  • 1/4 cup feta cheese (optional)
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper, to taste

Instructions

  1. Combine the fresh spinach, blueberries, cooked wheat berries, dried cranberries, and sliced almonds in a large bowl. Gently toss to combine.
  2. Make the dressing by whisking together olive oil, balsamic vinegar, salt, and pepper in a small bowl until well blended.
  3. Dress the salad with the dressing, toss gently to ensure everything is well coated.
  4. Add feta cheese if desired, sprinkling it on top just before serving.

Notes
