Description

Delightful strawberry oatmeal crumble bars with a crispy topping and a juicy strawberry filling, perfect as a wholesome snack or dessert.


Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup strawberries, chopped
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. Combine the rolled oats, all-purpose flour, brown sugar, melted butter, and salt in a large mixing bowl. Stir until the mixture resembles coarse crumbs.
  3. Press half of the oat mixture into the bottom of the prepared pan to form a sturdy base.
  4. Mix the chopped strawberries, granulated sugar, lemon juice, and vanilla extract in another bowl until combined.
  5. Pour the strawberry filling over the oat base, spreading it evenly.
  6. Sprinkle the remaining oat mixture on top of the strawberry layer.
  7. Bake in the preheated oven for 25-30 minutes or until the topping turns golden brown.
  8. Allow the bars to cool in the pan before slicing into squares.

Notes

For a vegan option, substitute the butter with coconut oil. You can also use whole wheat flour for a healthier alternative.
