- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1 cup strawberries, chopped
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
- Combine the rolled oats, all-purpose flour, brown sugar, melted butter, and salt in a large mixing bowl. Stir until the mixture resembles coarse crumbs.
- Press half of the oat mixture into the bottom of the prepared pan to form a sturdy base.
- Mix the chopped strawberries, granulated sugar, lemon juice, and vanilla extract in another bowl until combined.
- Pour the strawberry filling over the oat base, spreading it evenly.
- Sprinkle the remaining oat mixture on top of the strawberry layer.
- Bake in the preheated oven for 25-30 minutes or until the topping turns golden brown.
- Allow the bars to cool in the pan before slicing into squares.
Notes
For a vegan option, substitute the butter with coconut oil. You can also use whole wheat flour for a healthier alternative.
