Description

A vibrant and refreshing salad combining fresh kale, juicy peaches, and blueberries, perfect for summer meals.


Ingredients

Scale
  • 2 cups kale, chopped
  • 1 cup peaches, sliced
  • 1 cup blueberries
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup almonds, slivered (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Begin by placing the chopped kale, sliced peaches, blueberries, and red onion into a large bowl.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper until nicely emulsified.
  3. Drizzle the dressing over the salad mixture, and gently toss to combine.
  4. Sprinkle slivered almonds on top of the salad right before serving.
