- 8 oz short pasta (penne or rotini)
- 1 lb ground beef (or lean ground turkey/chicken)
- 1 cup diced tomatoes
- 1 can diced green chiles
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper, to taste
- 2 cups beef broth (or vegetable broth)
Instructions
- Brown the ground beef in a large pot over medium heat until fully cooked. Drain excess fat.
- Soften the diced onion and minced garlic for about 2-3 minutes until the onion is translucent.
- Mix in the diced tomatoes, green chiles, cumin, chili powder, salt, and pepper. Cook for another minute to let the flavors meld.
- Add the pasta and beef broth to the pot. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until pasta is al dente.
- Stir in the cheddar and Monterey Jack cheeses until melted and creamy.
- Serve immediately, topped with fresh herbs if desired.
Notes
For a vegetarian option, substitute ground beef with lentils or plant-based meat and use vegetable broth.
