Description

Embark on a flavor adventure with Tex Mex Pasta, a delightful fusion of Texan and Mexican cuisines featuring creamy cheeses, zesty tomatoes, and seasoned ground beef.


Ingredients

  • 8 oz short pasta (penne or rotini)
  • 1 lb ground beef (or lean ground turkey/chicken)
  • 1 cup diced tomatoes
  • 1 can diced green chiles
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper, to taste
  • 2 cups beef broth (or vegetable broth)

Instructions

  1. Brown the ground beef in a large pot over medium heat until fully cooked. Drain excess fat.
  2. Soften the diced onion and minced garlic for about 2-3 minutes until the onion is translucent.
  3. Mix in the diced tomatoes, green chiles, cumin, chili powder, salt, and pepper. Cook for another minute to let the flavors meld.
  4. Add the pasta and beef broth to the pot. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until pasta is al dente.
  5. Stir in the cheddar and Monterey Jack cheeses until melted and creamy.
  6. Serve immediately, topped with fresh herbs if desired.

Notes

For a vegetarian option, substitute ground beef with lentils or plant-based meat and use vegetable broth.
