Description

A cozy and hearty dish featuring baked orzo pasta enriched with creamy ricotta and colorful vegetables.


Ingredients

  • 1 cup orzo pasta
  • 1 cup ricotta cheese
  • 1 cup mixed vegetables (bell peppers, zucchini, spinach)
  • 1 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the orzo pasta according to package instructions, then drain it well.
  3. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about a minute.
  4. Introduce mixed vegetables to the skillet. Sauté until softened.
  5. Combine the cooked orzo, sautéed vegetables, ricotta, Italian herbs, salt, and pepper in a large mixing bowl.
  6. Transfer the mixture into a baking dish, spreading it evenly.
  7. Top generously with mozzarella and a sprinkle of Parmesan cheese.
  8. Bake for 25–30 minutes, or until cheese bubbles and turns golden brown.
  9. Allow to cool for a few minutes before serving.
