Instructions
- Preheat your oven to 350°F (175°C).
- Combine your wet ingredients in a large bowl: grated zucchini, grated carrot, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract.
- Whisk the dry ingredients in another bowl: flour, baking soda, baking powder, salt, and cinnamon.
- Mix the two together by gradually adding dry ingredients to wet mixture, stirring gently.
- Incorporate add-ins like nuts and raisins or chocolate chips.
- Scoop dough onto a parchment-lined baking sheet.
- Bake for 12-15 minutes until edges are golden.
- Cool cookies on the baking sheet for a few minutes, then transfer to a wire rack.
