Ingredients

Scale
  • 2 cups grated zucchini
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

  2. Combine the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract in a large mixing bowl.
  3. Whisk together the flour, baking soda, baking powder, salt, and cinnamon in another bowl.
  4. Add the dry mixture to the wet ingredients and stir until just combined.
  5. Gently fold in the chocolate chips.
  6. Pour the batter into the prepared loaf pan, smoothing the top.
  7. Bake for 50-60 minutes, or until a toothpick comes out clean.
